El Valle, Dominican Republic 70% Dark x Museum of Design Atlanta Collaboration Bar
We are so excited to offer this very special, limited edition 70% dark chocolate bar we created in collaboration with MODA, the Museum of Design, Atlanta, for their stunning exhibit on chocolate called "Bittersweet: The Design of Chocolate".
To create something totally new for the exhibit, we sourced organic cacao from family farms in the Dominican Republic and carefully developed a roast profile to allow the beans' naturally sparkling, dark chocolate flavor to come through.
As we do whenever we start working with a new cacao origin, we went through multiple roast profiles for this bean. Our lightest roast resulted in a head-spinning array of tropical flavors, which we loved for the wild variety, but thought needed to be toned down in order for the bar to taste recognizably like chocolate.
Our darkest roast created a very bold, traditional dark chocolate flavor, which was very pleasing, but we knew the heavier roast tamped out some of the flavors we thought were exceptional in the light roast. We decided for a medium roast: mid-range in oven temperature and mid-range in length of roast and then we went through multiple iterations, tweaking the roast, before landing on the profile you'll taste in this bar.
The first bite settles in with traditional flavors of dark chocolate--cocoa, dark chocolate cake. Under the unmistakable dark chocolate, you may taste, very subtly, notes that remind you of stone fruits like apricot and lychee. Medium acidity, medium bitterness, clean finish.
A white tea or chai latte, a bowl of fresh fruit, some time with a book of poetry or one on design.
Direct-sourced from a multi-generational family of cacao farmers in the Dominican Republic. The organic beans in this bar are specifically from the El Ramonal family farm in the El Valle region of the island.
